Carrot cake with Cream Cheese Frosting
Ingredients for the cake
2 cups APF
1 can Condensed milk
3/4 cup olive oil
3/4 cup milk
2 cups grated carrot
1 Tsp nutmeg powder
2 Tsp cinnamon powder
1 Tsp Clove powder
3/4 cup sugar ( 1 cup if you like it sweeter)
2 Tbsp Vanilla
3 Tsp Baking powder
1.5 Tsp baking Soda
Ingredients for the frosting
8 oz cream cheese
3 Tbsp cream
2/3 Cup confectioner’s Sugar
1 Tsp
Procedure for the cake
Pre-heat oven to 350 F. Mix all the Dry Ingredients together and sift. In a separate bowl mix all wet ingredients. Either using a mixer or a large wooden a spoon, mix the wet and dry ingredients. I use a cake mixer to allow air into the cake mix. Spoon into a baking dish and bake.
1/2 sheet rectangular cake pan takes about 30-35 Minutes. Check the done-ness by inserting a toothpick into the center. I should come out clean.
Procedure for the frosting
Keep the cream cheese outside for at-least 3 hrs. Whip the cream cheese, whipping cream and powdered sugar. Whip well. Cover cake !
I double the recipe to make two layers!!! And put the frosting in between.
