Menthi Usirikayi




Ingredients

  • Frozen Amla / Nellika / Usirikayi - 32 oz
  • Methi / Fenugreek Seeds - 3 tbsp 
  • Extra hot chilli powder -1 cup 
  • Kashmiri Lal chili powder - 1/2 cup 
  • Hing / aesafoetida - 3 Tbsp
  • Turmeric powder - 2 Tbsp
  • Mustard seeds - 2 tbsp
  • Red chilli flakes - 4 Tbsp
  • Salt - 1/2 cup ish 
  • Sesame oil - 1/2 cup + 1 cup


Procedure

  1. Roast fenugreek seeds until golden brown and fragrant . Powder into fine powder
  2. Thaw frozen amla at room temperature. If fresh amla skip step. 
  3. In a sauté pan,heat 1/2 cup sesame oil. Sauté amla until soft. Set aside. 
  4. In a seperate sauté pan, heat 1 cup sesame oil until smoking. Add mustard seeds. Turn the heat off as soon as the mustard seeds splutter. 
  5. Add the asafoetida, all the remaining chilli powder, fenugreek powder, chilli flakes and mix well. The heat in the oil will cook the spices. 
  6. Mix in the amla. Stir in salt as needed. 
  7. Set aside for at-least a day.  Mix in hot rice and eat. 
  8. Add additional salt if needed. 

This pickle needs to be refrigerated if you used frozen amla.
