Simple Asian Stir-fry
Ingredients for 6-8 servings
2 tbsp sesame oil
2 Cups - carrot sticks
2 red Bell peppers thinly sliced
1 cup snap peas
3 cups broccoli
4 Serrano thinly sliced
3 Cup cooked and Cooled Noodles
Sauce (Adjust Ingredients to taste)
2 tbsp Sesame oil
1/4 cup vegetarian “oyster” sauce
1/3 cup soy sauce
1/4 cup tomato paste /ketchup ( adjust salt if using ketchup)
1/4 cup Chilli paste
3 tbsp chili powder ( I used 2tbsp of Korean chilli powder and 1 Tbsp resham patti)
2 tbsp sesame seeds
1 Tbsp brown sugar
Salt
Garnish
1/2 cup Toasted peanuts ground coarse
Chili oil
Cilantro / Basil leaves
Procedure
In a sauce pan mix all the sauce ingredients and bring to a slow boil. Keep whisking, as the sugars can burn easily. Should take no longer than 3-4 minutes for the sauce to thicken and have a shine to it.
In a sauté pan, heat the sesame oil. Add the vegetables and sprinkle little salt on it. Sauté the vegetables on high heat for 4-5 minutes. I let them char on some edges. Now add the noodles and sauce, toss well and cook on high heat for 2-3 minutes.
Serve in a bowl garnished with peanuts, cilantro and chili oil! Enjoy
