Bokchoy cilantro Fried rice
Ingredients
3 cups cooked Rice, cooled to room temperature
2 cup Cups chopped Bok Choy
1 cup cilantro
1/2 cup green chili finely chopped
2 tsp sambal
4 tbsp oil
1/2 cup cashews
2 tbsp lemon juice
Salt to taste
Procedure
In a wok, heat the oil and sauté the cashew until golden brown. Retain the oil in the wok and separate the cashews and set them aside. reheat the oil add the green chili, cilantro and Bok Choy and sauté well. Add the salt lemon juice , and sambal and mix well.
Add the rice and mix well ! Adjust salt to taste! I usually let it crust on the bottom, the crunchy bits make it even more tasty.
