Sambal - Chili flakes in oil
I love chili oil but finding good ones has always been hard, especially those without garlic in them.
So here is my version of chili in oil.
1 cup dry red chillies - makes about 1/2 cup flakes.
1 cup sesame oil
Salt to taste
Pulse the dry red chillies in a mixer to make flakes. In a heavy bottom sauce pan heat the sesame oil to smoking point. Add the chili flakes and salt. Let steep on low-medium heat for 8-10 minutes. Don’t over salt the chillies. You want to be able to add this to your dishes. But you need a little salt to wake up the dry chillies.
Store in a glass jar, in a cool dry place! Doesn’t spoil easily.
You could also add a splash of lemon juice. If you do, please refrigerate the sambal.
