Ingredients
Serrano chillies 2-sliced
Dry white chana - 2 cups
Hulled Sesame -3tbsp
Cilantro - from one 3" bunch (measured at stalk)
EV Olive oil -
Dry chillies 3-4 (adjust to taste)
Salt
Lemon juice 10ml (adjust to taste)
Preparation
Soak chana overnight. Strain all the liquid and steam. Toast sesame seeds. Heat the oil in a pan. Add the dry red chillies, cilantro and Serrano. Add this mixture to the steamed chana, along with the sesame seeds, lemon & salt. Grind to a fine paste. Refrigerate.
Enjoy with pita chips, as a spread on bread, and my favorite- seasond with a little hing, mustard, dry chilli tadka with hot rice and ghee!!
