Ingredients
6-7 cups of rice flour
3/4 cup of Urad flour 9Black gram flour)
Sesame seeds – to taste
Ajwain seeds (carom seeds)
2 4-OZ butter
Water
Salt to taste
OIL to fry ( I take a 25” wok, helps make larger batches)
Mix all ingredients (except water) mix the butter well into the flour. Let it sit aside for 2 hrs.
Heat the oil, while its heating up, mix water into the flour. The consistency of the dough is tad more wet than a dough that can be rolled.
You will know if the oil is hot, by adding a small piece of dough. It will rise to the surface.
I make the shapes on the side on a paper towel so that the extra water is absorbed. Then I put them in the hot oil. The chaklis are done once the bubbles in the oil stop.
