Rasamalai (baked)


Ingredients for cheese Dumplings 

32 oz. Ricotta cheese 

1 c. sugar


Ingredients for Milk Syrup ( Ras)


24 oz. whole milk

1/2 a cup Sugar

6 whole cardamoms (seeded and powdered) 

Few threads of saffron

1 Tbs. finely ground pista 

1 tsp. rose water (optional)


Procedure 


Mix cheese and sugar well using a mixer or a fork. Transfer into a  rectangular 9" x 12" baking tray. No greasing required.  Bake in preheated oven at 350 F for 45 minutes, or until done. (Insert a toothpick, if it comes out clean, it is done.) 


When done, will set like thick pudding. Once Cool and cut into 1" squares. Do not take out of dish. Boil whole milk, saffron and sugar for 10 minutes. When cool pour over rasmalai pieces! Sprinkle with rose water, pista and saffron. Refrigerate and serve chilled. Serves 8.
