Savory Waffles with Roasted Corn Succotash-ish 


I will give two waffle mix recipes for this dish. One came from a dear friend Lisa Adhikari. She served us her recipe two years before savory waffles were a thing on Insta! Its yum and delicious and has been a kid favourite ever since. The second waffle mix is easy breezy shortcut! Comes in handy - many times! 





Ingredient List

Original  Waffle Recipe Ingredients

2 Cups APF
1/3 Cup Almond Flour
3/4 Cup Buckwheat Flour
1/3 Cup Rice Flour
1/2 Cup Rolled Oats
1/3 Cup Milk
1/3 Cup Oil
2 Tbsp Baking Powder
Salt to Taste

Quick / Shortcut Waffle Recipe Ingredients

4 Cups of Kodiak pancake Mix
1/2 Cup Ragi flour
1/3 Cup Oil
Salt to taste

Potato Sabzi 

4-5 Medium sized potatoes boiled, peeled and mashed
1/2 cup chopped cilantro
2 green Chillies finely diced
2 tbsp finely grated ginger
1 tsp turmeric powder
1 tsp asafoetida / hing powder
1 tsp Mustard seeds
1 tsp cumin powder (optional)
1 tsp Coriander powder (optional)
3 Tbps oil
Salt to taste

Roasted Corn Succotash-ish 

3 Corn on the cob
2 Medium tomatoes finely diced
1 English cucumber, finely diced
2 Tbsp Lemon juice
1 Serrano pepper finely chopped 
2 Cups of water
Salt to taste

Dressing  

Maple Syrup

Making the Roasted Corn Succotash-ish 

I call it succotash-ish it is missing a few key ingredients like Lima beans, okra etc, and because I do not saute' all the ingredient in a pan. 

Grill the corn on the cob, and then strip the kernels into a bowl, mix in the remaining ingredients and salt to taste.  - Yum!!! so simple and so delicious! 

Making the Potato Sabzi

Mix the salt into the water and then add the water to the potato mix. 

In a large Saute pan heat up the oil. Add the mustard seeds. Once the splutter add Green Chillies, Grated Ginger, Hing, Turmeric to the oil.  Add the mashed potatoes.  Cook until the mashed potatoes have absorbed the salt and the water. Mix in the fresh cilantro. 


Making the waffles

Use either of the pancake mixes. Mix in the potato sabzi you made above. Add water or milk to bring to the consistency of a pancake and waffle batter. make your waffles using your waffle maker. 

Top it with the succotash-ish. Drizzle some maple syrup. Serve it hot.
