Idli Podi

Idli podi or chutney podi is often used as a side for Idlis (soft-white Dumplings). They make a great add to rice or baked potatoes. yum!


Ingredients 

1 tsp Sesame oil
1 Cup Chana Dal (Split Pea)
1/3 Cup Urad Dal (split and de-husked Black Gram)
10-15 Dry Red Chilis 
3 Tbsp Sesame seeds
Salt to taste (3/4 tsp)

Procedure

In a saute' pan, roast the split pea & black gram, red chilli, and oil. Once the lentils are golden brown, add the sesame seeds. Sesame take very little time to get toasted. If you add them at the beginning, then they might burn very easily.  Hence the last minute addition :)

Add salt, & grind the mix into a powder (i keep it as coarse as a graham cracker crust).

One thing I found is that the amount of salt can get too salty very quickly. So just be careful when you are adding salt
