Cracked wheat salad

1 cup finely cracked wheat 
1 cup cucumbers diced
1 cup Tomatoes diced 
2 cups finely chopped parsley 
2 tsp lemon juice 
1 tsp pepper or 1 tsp paprika ( use either)
1/2 tsp Sumac ( if available) 
2 tsp olive oil + 1 tsp olive oil 
Salt to taste 
2.5 cups of water.

In a sautés pan, add 1 tsp olive oil and roast the Cracked wheat until light pink in color. Add hot water and cook until al dente. Are usually add a little bit of salt so that the cracked wheat taste good just bite self. Once cooked keep it aside in your salad bowl until cool. 
I don’t add all the water at once to avoid the wheat getting too mushy. So I stay close and add water as it starts drying out.

Next, in the same sauté pan add 1 teaspoon olive oil and lightly sauté parsley. Add the sautéed parsley do the salad bowl. Add cucumbers, tomatoes, Salt pepper and lemon juice to the bowl and mix well.
Yummy cracked wheat salad is ready to eat.


This portion will serve a family of four 1 1/2 servings each.
