Almond Cookies

This is a very nice recipe, courtesy of my dear friend Vijay Kesavan. I don't always use the whole 3/4 Cup of Ghee. I sometimes use a mix of margarine and olive oil. When i use the mix, i let the cookies sit longer. They become more like Desi style Almond Biscuits. :). Oh! and the last time i baked them i added some dessicated coconut to the mix! Hea.....ven!!


1.5 cups flour (maida/APF)

1 cup fine sugar

2.5 tbsp powdered almonds

1 tsp cardamom powder

1/2 tsp baking powder

1/2 tsp baking soda

Pinch of salt

3/4 cup ghee

1 tbsp chopped almonds - for garnish


Mix dry ingredients. Melt and add ghee little at a time and mix until all the dry ingredients mix well and you get roti atta consistency - most importantly it should be possible to make small balls of the cookies and they should hold the shape. Roll the batter into balls and slightly flatten it. Place them 1 to 1.5 inches apart on a cookie sheet (spray with oil or speread parchment paper on the sheet). Bake @ 350 for around 15 to 17 min in a pre-heated oven.
