Michigan Rocks - Shortbread Cookies
- 1 cup unsalted butter, softened
- ¾ cup powdered sugar
- 1 tsp vanilla extract
- 2 cups all‑purpose flour
- ¼ tsp salt
- ½ cup dried cranberries, chopped (Optional)
- ½ cup pistachios, chopped (Optional).
If Pistachios are salted, skip the salt.
whip butter until light and fluffy. It will go from yellow to white and almost double in volume.
Mix in Vanilla, & Sugar, and whip together until fluffy.
Separately sift the APF and Salt. add in and mix. Roll into a 2" pipe. Refrigerate for 2 hrs.
Cut into 1/2 Inch disks and bake for 1-15 mins at 350F. Dough Freezes well.
