Vegan / Vegetarian - Mango Refresher Dessert

Recently we hosted a dinner where some guests followed vegan regimen. Well making dinner was the easy part, as Indian cuisine is so vegan friendly. It was dessert that had me stumped. Really stumped. Almost every dessert that was easy to make used either milk or cream or ghee! So here is one inspired by a Mango Mousse dessert that I made recently. Recipe provides Vegan and Vegetarian options. 






Needs at least 4 Hrs of refrigeration time before serving

Ingredients Vegan / Vegetarian

Procedure (Vegan)

  • Step 1 - In a large bowl, Mix light coconut milk, condense milk and mango pulp. Refrigerate. 
  • Step 2 -  Mix the Diced Mangoes into the Mango Coconut milk mix in Step 1
  • Step 3 - Rinse Tapioca pearls in cold water multiple times until all the starch washes off. Soak in water for 30 minutes. Boil 6 cups of water in a pot, add the soaked tapioca pearls and boil until they are clear. Strain the pearls using a strainer, and rinse with cold water to stop cooking.  Add the tapioca pearls into the mango-coconut mix in Step1. Add 2 Cup of cold water. Consistency should be like pancake batter. 
  • Step 4 - Take two cups of boiling water, mix in Orange Jello powder, and mix until fully dissolved. Take a large serving bowl with flat bottom. Pour the Jello mixture and let it set in the refrigerator until serving. 
  • Serving Time: Cut Jello into 1" Cubes. Mix in the jello cubes into the mix made above. Serve cold! Yum!!!

Serves 16 - 20 people easily! 

You can make a non-Vegan version by subbing the alternate ingredients in the same procedure.
