Cacio e pepe’
Ingredients
16 oz fettuccini pasta
1/2 cup heavy cream
1/2 cup butter
1/2 cup grated Parmesan cheese
Crushed pepper
1 tsp Fresh / Dry Parsley
Salt
Water
Procedure
In a large pot, boil water. Salt the water and then Cook the pasta as per the instructions on the box. Drain and keep aside. Don’t throw all the pasta water away. We can use it later while cooking.
In a sauté pan, melt the butter. Add cream, pepper, and parsley. Using a whisk - mix well. Toss the pasta into the cream sauce, and mix well. Add the grated cheese from the top and mix. Add more crushed pepper. If the pasta feels too dry, then add some pasta water to loosen it up.
Serve hot !
