No Bake lemon pie
Ingredients
12-14 full size graham crackers
1/2 cup melted butter
8” pie plate + parchment paper
1 can condensed milk
3/4 cup lemon juice
1/2 tsp lemon zest
1/2 tsp vanilla essence
Some orange rinds for decoration
Procedure
Ina food processor, pulse the graham crackers until fine crumbs. If you don’t have a food processor, a zip loc and rolling pin just work fine!
Mix the melter butter with the graham cracker crumbs.
Layer the 8” pan with the parchment paper, and press the crumbs into a fine even crust layer.
In a separate bowl, mix the condensed milk, lemon juice, vanilla essence and the zest.
The curdling property of lemon, starts making the condensed milk coagulate. Pour this mix into the pan, even it out. Now refrigerate for 3 hrs or even better overnight!
Cut, garnish and serve !
