MOCK PENNE ROSA

 Penne Rosa (Mock)


My kids love Penne Rosa from Noodle and company.  Its their favourite and almost every week they ask me to make it. Here is my recipe! Its almost there, not perfect. But, Hey I hear no complains from them so must be good.



Ingredients


16-20 Oz Penne Pasta or CorkScrew Pasta
2 Cups Cherry Tomatoes
2 Cups Spinach Leaves - Cleaned and washed
2 Cups Tomato Puree'
1/2 Cup Cream 
3 Tbsp White Cooking Wine
2 Tbsp finely chopped Basil Leaves
1 tsp White Pepper powder 
2 tsp  Chilli Flakes
2 Tbsp Olive Oil + 2 Tbsp Olive Oil
1 tsp sugar ( If tomatoes are too tart)
Feta or Parmesan Cheese for topping
Salt & Pepper

Process


In a boiling pot of salted hot water add  2 Tbsp of oil and cook Pasta al dente. Remember to rinse with cold to stop cooking. We will recook the pasta once the sauce is ready.

In a separate pan heat 2 Tbsp of olive oil, add the cherry tomatoes. Lets them start to roast. Now add the tomato puree', salt and cooking wine. and simmer on open for 2-3 minutes. Stir in the heavy cream and cook for another 2-3 minutes, or until the raw cream smell evaporates. At this point if the sauce is too tart, stir in the sugar. 


Mix in the Pasta, Spinach leaves, basil leaves, and red chilli flakes. cook just until the sauce envelopes the pasta and the spinach leaves have wilted. They do wilt pretty fast.

Serve hot with cheese sprinkled on top!
