Cream of Broccoli soup

Cream of Broccoli soup 




Ingredients 


1 tbsp olive oil

1 cup diced carrots 

3 cups broccoli florets 

1/2 cup cream 

1/2 cup cheddar cheese 

Salt 

Pepper 

4 cups Vegetable Broth or water 

1 tbsp rice flour


Procedure 


In a deep sauté pan,  heat the olive oil. Sauté the broccoli and carrots with a little bit of salt for about 6 minutes. Add the vegetable broth heavy cream. Let it come to a boil. Make a slurry with rice flour and 3 tbsp water. Boil for about another 5 minutes, until the soup thickens.  Turn off the stove and mix in the cheddar cheese. Add salt and pepper to taste. Serve when hot !
