Vegetable Jalfrezi 



Ingredients 


2 cups finely diced tomatoes

1 cup diced ( 2” large pieces) cabbage

1 cup diced bell pepper 2” squares 

1 cup diced carrots (1” cubes)

1.5 cups of paneer 1.5” cubes 

1/4 cup of chopped cilantro 

1/4 cup 2” pieces of ginger sliced on length 

5-6 green chilies cut lengthwise 

2 tbsp tomato ketchup

1 tbsp white wine vinegar ( optional) 

1/2 cup tomato paste 

2 tsp amchur ( dry mango powder)

1 tsp turmeric

1 tsp dry roasted coriander seed powder

2-3 tsp dry red chili powder 

1 tbsp vegetable oil 

2 tsp salt 



Procedure 


In a heavy bottom pan, heat the oil. Add the ginger and green chillies, sauté until soft. Add the tomatoes, salt, chili powder, amchur, and turmeric. Stir it in well. Let it sweat well.  Add the carrots. Carrots take longer to cook than bell pepper and cabbage.  Let the carrots cook for about 3-4 minutes before you add in the other vegetables!  Add the tomato paste, ketchup and vinegar! Cook with lid closed for about 4 minutes!  Stir in the paneer  and cilantro and cook for another 3 minutes with the lid closed. 


Yum! And ready to serve! Enjoy with anytime of bread, rice or even dosa! Yep masala dosa with veg Jalfrezi ! Who would have thought? Adjust salt and spice to your levels !
