Mango Chili Fried Rice



Ingredients 


4 cups Rice cooked and cooled to room temperature 

1.5 Cups mango (half ripened, peeled & diced into 1/2” pieces) 

1 cup cabbage chopped 

1 cup chopped bell peppers 

1/2 cup cilantro 

1/2 cup green chili finely chopped

2 tsp sambal 

3 tbsp lemon juice 

4 tbsp oil 

1/2 cup cashews 

1 tsp Turmeric 

Salt to taste 


Procedure 


In a wok, heat the oil and sauté the cashew until golden brown. Retain the oil in the wok and separate the cashews and set them aside.  reheat the oil add the green chili, cilantro and sauté well. Now add the the bell peppers and sauté until soft. Add mangoes and cabbage last as they don’t need to cook much! Add the salt, turmeric, sambal and lemon juice and mix well. 


Mix  the rice and mix well !  Let it form a crust On the bottom for some crunch. Adjust salt to taste! You can mix in sauteed extra firm Tofu if you want more protein from the dish.
