Kharvas / Junnu / Flan

Kharvas / Junnu 




Kharvas or Junnu is usually made from milk that is high in colostrum. Remember my grandmother making it from day 3 milk. It is hard to get this milk, but there are some very easy alternatives to the original recipe! The end result is very close to the original product. 


Ingredients 


1 cup yogurt - Strained overnight to remove any excess water

1 cup whole milk 

3/4 cup Condensed Milk

1/2 cup Milk powder 

1/2 tsp Coarse pepper

1/2 tsp cardamom powder 


Procedure 


Mix all the wet ingredients into a very smooth paste. Ensure there are no lumps! Add in the cardamom and pepper and mix well. 


Transfer mix into a stainless steel container, cover with a steel lid and steam in an instapot or pressure cooker for about 45 mins. 

Note: you don’t want to pressure cook it! You want to steam the mix. So don’t seal the steam vent.  Once done, it will jiggle some, but nothing will stick to the fork or toothpick.  Cool to room temperature and refrigerate overnight. 


Like you would do a cake, use a knife to release the kharvas from the edges of the dish. You should be cut into the Kharvas like a cake and serve. 


Enjoy!  You can use other flavors like vanilla or saffron !
