Quick Tomato ketchup

Often recipes call for tomato ketchup in them! And more often I find an empty bottle ketchup lying in my fridge. Kids!!! 

So here is a very quick 5 minute recipe to make a great ketchup! 



Ketchup from canned tomato sauce 

1 can tomato sauce (8 oz)
2 tbsp sugar
1 pod cardamom
1/2 clove
Salt to taste

Cook the tomato sauce down in a sauce pan further with the spices and salt. Add sugar to it and cook until glossy. This should take no more than 5 mins on medium flame! Don’t leave the sauce to simmer on it own! This will burn quickly. 

Ketchup from fresh tomatoes 
2-3 fresh ripe tomatoes puréed to give you 8 oz tomato paste
1 tsp vegetable oil
2 tbsp sugar
1 pod cardamom
1/2 clove
Salt to taste

In a sauce pan add heat the oil, add the tomato puree, pinch of salt and cook well on high heat for 5-6 mins.  Keep stirring with a whisk. Now add spices and cook for another couple of minutes. Add the sugar and cook for few minutes, until glossy. 

Not all tomatoes are made the same. If the saude let’s too thick, add water, a Tsp at a time. 

This is yum with samosa or even just bread!
