Aloo Gobi Fry (Alternate Recipe) / Potato Cauliflower stir fry



Ingredients 


2 Cups Cauliflower 
2 Cups Diced Potatoes 
2 Tbsp Green chili, finely diced
1/4 cup fresh cilantro / coriander leaves - finely chopped
1 tsp turmeric
1 tbsp Dry Fenugreek Leaves (Methi Leaves)
1 tbsp Dry parsley leaves
1 tbsp Dry Mango Powder (Amchur)
2 tsp coriander seeds, roasted and powdered 
2 tbsp oil + 1 tbsp oil
salt to taste

Procedure


Toss the cauliflower florets in 1 tbsp oil and salt and bake in oven at 450F for 20 minutes and broil at 550F for 3 minutes. Keep a close eye when you move to broil.  Once done - keep it aside to cool.

Meanwhile in wok/skillet  heat 2 tbsp oil.  Add the chili and cilantro and saute for a minute. Add the potatoes saute until soft. I usually close the skillet with a lid, and leave the potatoes on medium for about 5-6 minutes until they soften. Then cook on medium flame for about 5 minutes until golden brown. Add the over roasted cauliflower. Add turmeric, coriander powder, mango powder, fenugreek leaves and parsley leaves.  Salt and sauté.

Serve with hot rice or roti !!
