Thai Basil Fried Rice

Thai Basil Fried Rice




2 cups cooked cooked rice

1/2 cup Thai basil chiffonaded 

1/2 cup cilantro 

1 tbsp diced jalapeño 

1/2 cup cashew

1 tbsp + 2 tbsp - sesame oil

2 cups mixed vegetable ( carrot,peas, beans, corn)

1.5 tsp amchur ( dry mango powdered) - optional 

2 tsp chilli flakes or chilie paste 

Salt to taste 


In a heavy bottom pan take 1 tbsp oil, sauté basil, cilantro, jalapeños and chilli flakes. Add the vegetables and cook on high flame for about 5 mins. Add the cooked rice, salt and mix well. Let it sit on medium  flame for 3 mins more so that you can get a nice crust on the bottom. 


In a separate pan, sauté the cashews golden in 2 tbsp sesame oil.  Add the cashes and oil to the rice. Mix well and serve.
