Roasted Jalapeños and cilantro Hummus

We don’t use onion or garlic in our cooking at home. Yes Satvik khana ! So I usually use other spices to up-flavor my dishes!

Here is one of our favorite hummus 

1 cup boiled garbanzo beans
2 Jalapeños ( reduce if you don’t like it spicy)
3 tbsp Dry roasted sesame seeds ( you can sub with Tahini)
2-3 dry red chilies 
1/2 cup cilantro / coriander leaves 
1/2 tsp Sumac (optional) 
2 tbsp lemon juice 
2 tbsp EVOO for grinding + 1 tbsp EVOO for sauté step + 1 tbsp EVOO for garnish 
Salt 
Some paprika for garnish
Some Sumac for garnish 

On open flame roast the Jalapeños. One charred on all sides,  cool it down and the peel the char off. 
In A sauté pan - in 1 tbsp olive oil, sauté red chilies and cilantro. In a mixer add all the ingredients except for garnish and make a fine paste. 

Garnish with sumac, paprika and EVOO. Enjoy with chips, or on a bread as a spread, or even as a chutney in hot rice !
