Orange Cream Cake



Growing up there were these special cookies that had Orange vanilla cream in the center! My sister and I used to thoroughly enjoy eating them :) this cake recreate that nostalgia. Great for a  spring time get together or just with some tea. 

For the Cake

Dry Ingredients
All Purpose Flour 1 Cup
Sugar - just over 1/2  cup 
Baking Powder - 1.5 Tsp
Baking Soda - 3/4 Tsp

Wet Ingredients

Sweetened Condensed Milk - 3/4
Vanilla extract - 2 Tsp
Orange extract - 1.5 tsp (optional) 
Fresh oranges - enough to make juice for 1 cup
Olive Oil - 3/4 Cup

For topping 

1 cup macerated raspberries in 2tbsp sugar

For the frosting 
2 cups whipped cream
1 cup cream cheese
1 cup sugar
1 tbsp vanilla essence 

Decoration - Fresh fruit.

Instructions for cake 

If you have fresh oranges at home, you can just purée the entire orange, peeled. Add a little bit of peel to give it more flavor

Pre-heat oven to 350 F.  Mix all the Dry Ingredients together.  Add the wet ingredients to the dry mix. I use a cake mixer to allow air into the cake mix. Spoon into a baking dish and bake.

9 inch round cake pan takes about 30-35 Minutes.  Cup Cakes take about 10-12 minutes. Check the done-ness by inserting a toothpick into the center. It should come out clean.

Frosting
Mix the ingredients and cover your cake evenly. Garnish with macerated fresh fruit. Yummmo!
