Spicy Cilantro Rice



Ingredients

3 cups  Rice (Basmati or any long grain rice)
1 Cup Cleaned and chopped cilantro
3-5 Serrano Chillies
1/3 Cup Lemon Juice
5 tbsp dry Cilantro powder (see instructions below)
3-5 + 5 Dry Red Chillies (adjust to taste)
2 + 6 Tbsp Oil (olive or vegetable)
1 Tbsp Mustard seeds
1 tsp - Hing (Asafoetida)
Cashews to garnish
Salt, Water

Pre-work 

Sun Dry a bunch of cilantro until it practically crumbles in your hand. Grind in  it a spice mixer and keep. Its is a great add to Rasam or Lemon rice.

If you don't have sun handy like us in Portland Oregon, you can use an oven. Spread cilantro on parchment paper and bake in oven at a low 190 F, until dry.

Procedure

Add 7 cups of water to Cook the rice with 2 Tbsp of oil. The oil will keep the rice separate.
Let the rice cool.  Grind 3-5 Red chillies into a fine powder and add to rice. Grind fresh green cilantro with Green chillies and lime juice, add to rice. add 5 Tbsp of Cilantro powder.  Add Salt to taste and mix well.

In a small Skillet, heat the oil. Add the mustard seed and the remaining dry chillies. Wait until the mustard splutter. Add the hing, mix well for just a few seconds until the asafoetida blooms. Turn the fire off. Add this hot oil to the rice, add cashews and mix well. 

Cilantro rice is ready to be served.
