Eggless Chocolate Cake with Chocolate Ganache


For the Cake

Dry Ingredients
All Purpose Flour 1 Cup
Unsweetened Cocoa powder - 4 Tbsp
Sugar - 1/2 Cup
Baking Powder - 1.5 Tsp
Baking Soda - 3/4 Tsp

Wet Ingredients

Sweetened Condensed Milk - 1 Cup (you can easily split 1 Can for the cake and ganache)
Vanilla extract - 1.5 Tsp
Water - 3/4 Cup
Olive Oil - 3/4 Cup

For the Ganache

1 Cup Condensed milk
3 Tbsp Heavy Cream
Unsweetened Cocoa powder - 4 Tbsp



Instructions for cake

Pre-heat oven to 350 F.  Mix all the Dry Ingredients together.  Add the wet ingredients to the dry mix. I use a cake mixer to allow air into the cake mix. Spoon into a baking dish and bake.

9 inch round cake pan takes about 30-35 Minutes.  Cup Cakes take about 10-12 minutes. Check the done-ness by inserting a toothpick into the center. I should come out clean.

For the Ganache

Mix all ingredients. Double boil on stove for 5-7 minutes (or until you see bubbles around the corner).
I cook in microwave for about 3 minutes stirring intermittantly.

Note - The cake actually has very little sugar in it. My family likes it this way.

You could add 3-4 Tbps of Sugar and add a few more minutes of baking time or
Pipe the ganache into the center. to incorporate sweetness into every bite.

This cake goes really well with Ice cream :)
